A Fiery, Flavorful Favorite
The Door County Fish Boil is a fiery, flavorful favorite meal of both residents and visitors alike. What began as an economical way to feed large, hungry hoards of lumberjacks and fishermen has become an integral part of the Door County experience.
It all starts outdoors with a blazing bonfire under a large kettle of salted water. When the pot is boiling just right and the crackle of the fire is just loud enough, the boil master adds a basket of potatoes and onions to the kettle. A few crackles and a couple stories later, the mild whitefish steaks, fresh from the surrounding Lake Michigan waters, are delicately lowered in. At just the right moment, the boil master tosses kerosene into the fire beneath the pot, exciting the photographic blaze and causing the water to boil over, dramatically carrying off the fish oil that has collected on top. The fish, potatoes and onions are pulled out and carried to the kitchen, where they’ll be served with a generous drizzling of Wisconsin butter…dinner is served. And let’s not forget the traditional dessert – a slice of Door County cherry pie!
Even people who don’t like fish have been known to enjoy the mild tasting flavor when fish is cooked this way. However, most restaurants do offer a non-fish alternative choice on request.
While reservations are not always required, due to the popularity of fish boils they are strongly encouraged.
